is it possible to enter and leave fullscreen mode via key down?

Yes. When a composition viewer window is focused, you can press ⌘F to toggle fullscreen mode. (This is built-in to every composition.)

Or if you want to use a custom key and give the composition control over changing the fullscreen status, you can use the Change Fullscreen Status node. I’ve attached an example composition.
